MOIST BLUEBERRY
BANANA BREAD

MAKES: 1 LOAF

Serving

INGREDIENTS 

  • 3 bananas

  • 2C almond meal

  • 1C Casarale Organic Sprouted Brown Rice Flour

  • 1 tsp baking powder

  • ½C Spiral Organic Maple Syrup

  • 2 eggs, beaten

  • ½C coconut oil, melted

  • 200g fresh blueberries

DIRECTIONS 

  1. Mash the bananas in a large bowl and set aside.
     

  2. Mix the almond meal, brown rice flour, and baking powder in a separate large bowl.
     

  3.  Mix maple syrup, eggs and coconut oil with the bananas.
     

  4.  Add flour mixture and blueberries and stir until combined.
     

  5.  Transfer the batter to a loaf pan, and top with extra banana slices and blueberries.
     

  6.  Preheat the oven to 175C.
     

  7.  Bake for 40-45 minutes, or until a toothpick inserted into the centre comes out clean. 
     

  8.  Slice and enjoy!
