MOIST BLUEBERRY
BANANA BREAD
MAKES: 1 LOAF
INGREDIENTS

3 bananas
-
2C almond meal
-
1C Casarale Organic Sprouted Brown Rice Flour
-
1 tsp baking powder
-
½C Spiral Organic Maple Syrup
-
2 eggs, beaten
-
½C coconut oil, melted
-
200g fresh blueberries
DIRECTIONS

Mash the bananas in a large bowl and set aside.

Mix the almond meal, brown rice flour, and baking powder in a separate large bowl.

Mix maple syrup, eggs and coconut oil with the bananas.

Add flour mixture and blueberries and stir until combined.

Transfer the batter to a loaf pan, and top with extra banana slices and blueberries.

Preheat the oven to 175C.

Bake for 40-45 minutes, or until a toothpick inserted into the centre comes out clean.

Slice and enjoy!
