CHORIZO SPIRALS
INGREDIENTS
• 250g Casalare Spirals
• 2 Tbsp Extra Virgin Olive Oil
• 2 large cloves of Garlic, minced
• 1 large Onion, finely diced
• 250g Chorizo Sausage, finely chopped
• 125g fresh Cherry Tomatoes, finely chopped
• 120g Semi Dried Tomat,o finely diced
• ½C Grated Parmesan Cheese
• ¾C Fresh Cream
• Salt and Black Pepper to taste
DIRECTIONS

In a large pot (5 litres or more), boil 3-4 litres water and cook pasta as per directions. Rinse with warm running water and drain.

Heat a frying pan, add oil, garlic and onion sauté until onion is translucent.

Add chorizo cook till little crispy, add cherry and semi-dried tomatoes, stir.

Add pasta, stir through till well combined.

Turn off the heat, add the parmesan and cream stir/toss through.

Salt and black pepper to taste. Serve and enjoy!
