BROCCOLI
SOUP

SERVES: 2-3

Serving

INGREDIENTS 

  • 2Tbsp Spiral Foods Organic Extra Virgin Olive Oil

  • 3Tbsp Casalare Rice Crumbs

  • 1Tbsp slivered almonds

  • ¼ onion, sliced

  • ½ clove garlic, finely chopped

  • 1/3 broccoli, chopped

  • 1 potato, chopped

  • 2C water

  • 1 tsp salt

  • ½ tsp vegetable stock powder

DIRECTIONS 

  1. Pour oil in a small pan on medium-high heat. Add rice crumbs and slivered almonds. Cook and stir for 2-3 minutes or until rice crumbs turn brown.
     

  2.  Heat the oil in a large pot on medium heat. Add the onion and garlic and cook and stir, for 2-3 minutes.
     

  3.  Add broccoli, potatoes, water, salt and vegetable stock and bring to the boil.
     

  4. Cook, stirring occasionally, for 20 mins or until broccoli and potato becomes tender.
     

  5. Blend all ingredients together until smooth.
     

  6. Ladle the soup evenly among serving bowls. Serve immediately with rice crumbs mix. Enjoy!
