Important Handling Tips for Caterers/Chefs

To avoid cross contamination, care must be taken to ensure pasta does not come into contact with cereals of hidden wheat base starches often found in sauces. Some examples of cereals containing gluten are: wheat, rye, barley, malt, oats, spelt, triticale and their derivatives. Clean equipment, utensils. Benches etc thoroughly prior to handling. Avoid flour dust from other preparations. Ensure staff are trained in awareness of coeliac disease and gluten intolerances.
